What a busy weekend!
I have been in the kitchen for what it feels like the ENTIRE weekend cooking up a whole bunch of new recipes. I had a pretty high goal of getting to 50 sugar-free recipes by the time our next challenge starts (Feb. 6!!)
Well, I may have another week before that next challenge, but in order to get them uploaded, formatted, and all of that other fun stuff, I really needed to get crackin’!
The hard work paid off, because I made some pretty SLAMMIN’ dishes this weekend that I can’t WAIT for the members of the No Sugar, No Sweat challenge to try!

So let’s see what we have here…. Pumpkin Pancakes with a Vanilla Coconut Butter, next up: Caprese Egg Cups with Prosciutto, and finally Chocolate Raspberry Mousse.
Now, some of you might be scratching your heads saying, wait a minute, I thought you cooked sugar free foods, how can these be sugar free?!?
Well, grasshopper, it’s what I love to do 🙂
Who said eating sugar-free had to be so hard?
It really doesn’t, not when you’re eating foods that actually taste good while doing it!
