There’s nothing like the sweet pop of a cherry tomato in your mouth, is there? I love this as a lunch dish, and fresh basil is key!
- 1 can of white or campanelli beans (drained and washed)
- 2 cups cherry tomato (sliced or whole)
- 1 clove of minced garlic
- 10 fresh basil leaves
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic glaze
- Salt and cracked black pepper to taste
Open the can of white beans and drain the fluids. Wash the beans thoroughly in a strainer to remove any residue, and put in a large bowl. Mince 1 garlic clove and add.
Add the cherry tomatoes (slice in half or leave whole). Chop the basil leaves and combine with beans, tomatoes, and garlic. Drizzle the olive oil, balsamic glaze, and add salt and pepper to taste.
