Don’t know what to do with your leftover chicken? Freshen up leftovers making a classic chicken salad dish.
- 2 chicken breasts
- 2 tbsp organic or homemade mayonnaise
- ½ cup celery (chopped)
- ½ cup red grapes (halved)
- ½ cup walnuts (chopped or halved)
- ½ tsp onion powder
- ½ tsp celery salt
- ½ tsp salt
Use two cooked chicken breasts (or if you have left over from a whole roasted chicken, this works great!) and chop up the chicken into small cubes. Add chopped celery, halved grapes, and walnuts and mix. Add the organic or homemade mayonnaise. Mix thoroughly together, and add dry seasonings. Add more salt if desired, and mix well.
