Today was one of those mornings when getting up and out of bed was a
struggle. Cold Sunday mornings are meant to be spent in bed, right? Okay, well aside from letting my dog, Stella, out when she woke me up, we may have been in bed past the morning.
We were up late watching documentaries and making this website look awesome! (We as in Jon and I, since Stella was snoozing for most of the night.) And I’m so excited to be able to share this with you!
For those of you who don’t know me, I’m Nicole, and I LOVE to cook. And now since making a life-style change to eating sugar-free, I love to cook sugar-free!
With the encouragement of friends and family, I took my passions online to help others looking to jump-start a change to eating habits with the No Sugar, No Sweat Challenge.
If you’re not a cook or chef, you don’t need to be. I’m not a chef, but my parents were, and they passed down their passion for good food to me. And I hope to pass it along to you!
So anyway, I’ll be sharing with you what I eat, cook, buy at the grocery store, and how I live my life eating like I mean it.
This morning (or should I say afternoon) I started off with a quick protein shake, since I needed some sustenance after going to the grocery store, following that up with some ready to eat rotisserie chicken.
If you’re not a big cook, rotisserie is an awesome way to get delicious chicken easily! I roast my own often, but since I was already hungry when I got to the store, I needed to make that my lunch as soon as I got home!
With the carcass after we eat the chicken, I’ll make a soup with fire-roasted tomato, celery, and a little bit of brown rice. But anyway, that’s another meal for another day!
