Hey gang, I don’t know about you but I am SO happy the weekend is here! I feel so much better than I did earlier this week (and not just because there’s no work tomorrow) but because last night I promised myself I would do some meal prep and cook my (and Jon’s) breakfasts, snacks, and lunches for today and I did, making today so much easier knowing I had an actual meal to heat up rather than something I tried to throw together in the twenty minutes between getting out of bed and walking out my front door.
Not only did I accomplish the food prep, but it was good! Sometimes, when you’re testing new meals, you have no idea how it’s going to turn out. But I got a text from Jon this morning (actually several) about these Buffalo Turkey Bacon Egg Cups while I was work. The text thread was as follows:
“Omg those egg cups are so good”
“they taste super unhealthy”
and to top it off: “those are phenomenal”
Now, I love being complimented on my food, and Jon knows that, but even then it’s rare to get 4 texts about it. Maybe two or three J
The avocado egg salad that I prepped ahead was also delicious! For dinner tonight, I made buffalo chicken wings (baked and extra crispy) with a side salad. I’ve got my eye on a few recipe to test this weekend and get a better head start for the week – I can’t wait!
