Kale, kale, kale. It gets so much hype these days about just how good the stuff is for ya, but on its own… kind of bitter. I am personally not a huge fan of kale salads (mixed greens, for me, please!) but I like them in smoothies enough (still prefer spinach) but have actually found I really enjoy kale either sautéed with some EVOO, salt, pepper and garlic powder… or now as kale chips.
I honestly thought they would be so much harder to make than they actually were… and now, they are a must have in my house. I can’t keep enough kale in my house now, actually!
Totally serious, when I made these Jon had to confirm these were healthy and asked that I make them for him to have available as snacks all of the time. Done! That first day I made them, I ended up making the whole big 10 oz bag from Trader Joe’s…. and it was gone in an hour. Best way to get my green veggies in yet!
They are super crispy and airy and only takes about 15 minutes to make. I, like most of you, don’t have time to put it on a super low setting and wait for hours or can afford a dehydrator. This is quick, easy, and delicious. You can adjust the flavors of the seasonings as desired… might have to try one with old bay and salt!
Preheat oven to 350 degrees. Begin prepping kale by stripping the big veins from the kale- you just want to get the leaves here.
Add kale to a large mixing bowl, and toss with the olive oil. Add seasonings, and toss well. Spread onto a baking sheet (this will probably use 2 baking sheets to make) and bake for 10 minutes. Then, using a spatula, flip over the kale and bake for another 5 minutes.
