Need an option that kick your fast food craving? This should do the trick. Be sure to serve with some sort of greenery!
- 2 lbs of chicken wings (chopped to wingettes and drumettes)
- 1 tsp of garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 tbsp coconut oil
Put the wingettes and drumettes into a large mixing bowl. (You may need to chop the whole chicken wing into the drumettes and wingettes.) Add the salt, pepper, garlic powder to the chicken and mix, letting the mixture sit for 15 minutes.
Using a cast iron skillet, add 1 tbsp of coconut oil to the pan. When the oil starts to sizzle in the pan, you’ll know the pan is hot enough to add the chicken. You may only be able to add half of the chicken – there’s no need to crowd the pan. Let the chicken cook until they get nice and golden brown on each side. This will take about 7 minutes per side, but cook longer if necessary.
Cut a piece of the chicken to make sure it is fully cooked, or use a cooking thermometer to make sure the meat is about 165 degrees. Plate on top of a paper towel to soak up the excess oils and let cool a little before digging your teeth in.
