Apple Cider Vinegar is loaded with beneficial properties – as I’m sure you’ve seen it blasted all over the internet. If you’ve ever seen a post but not quite gotten what Apple Cider Vinegar can do for you – I actually thought it was a load of bologna until I read The Obesity Code by Jason Fung where it actually explained how two key things: fiber and vinegar, are protective factors for fattening foods (remember fattening foods are NOT the same as foods that contain lots of fat, like meats, nuts, oils, etc.) It’s truly a fascinating read, and if you want a better understanding of why people REALLY get fat, (also the title of my other favorite book Why We Get Fat) it’s an eye opener.
Anyway, so Apple Cider Vinegar in particular has some amazing health benefits (promoting healthy blood sugar is one of them!) and so I’ve created this delicious dressing for my salads. Enjoy!
- Combine all ingredients together in a bowl and whisk until combined. Store in a glass jar, and let rest in the fridge for 30 minutes before using.
