Smoked salmon is one of my favorite breakfast food items ever! This dish is packed with protein and healthy fats.
- 2 eggs
- ½ avocado
- 2 slices smoked salmon
- Salt & pepper to taste
- Green onion for garnish
Spray small pan with olive oil over medium heat. Add two eggs, making sure not to break the yolks. Sprinkle with salt and fresh cracked black pepper and let cook. One way to speed up the process of cooking sunny-side up eggs is to add a plate or pot lid, leaving just a crack to let out some steam. Check this frequently because it really does cook all of the whites quickly! Slice ½ an avocado and scoop out onto the plate, adding the two slices of smoked salmon as well.
I like this dish with my eggs sunny-side up, but for over easy, simply flip and let cook for a minute before taking off the plate. For over-hard, cook for another two minutes. When the egg whites are fully cooked (or eggs are cooked as desired) add on top of the salmon. Finish with some chopped green onion on top of the egg.
