Mexican food can give some great options when trying to eat healthy. Just avoid the dairy (and tortilla chips) when eating out!
- ½ chicken breast
- 1 tsp extra virgin olive oil
- ½ tomato
- ½ jalepeno
- ½ small white onion
- ½ avocado
- 1 cup romaine lettuce (chopped)
- ½ tsp garlic powder
- salt and pepper to taste
- juice of ½ a lime
- 1 tbsp chopped cilantro
First, dice your chicken breast and toss in olive oil in pan over medium heat.
Next, prepare your pico de gallo. Dice your tomato, jalepeno, onion, and toss together. Add the juice of ½ a lime, and add the chopped cilantro and season with salt, pepper, and garlic powder to taste. Set aside.
Get your base of the burrito bowl ready, by adding your chopped romaine to your bowl. Add the chicken, ½ avocado, and top with pico de gallo.
