Ahhhh Peppermint Mocha. Like a PSL come September, I wish I could have a Peppermint Mocha Latte all day everyday. It’s pretty amazing, we all know it. And sure, there are quite a few creamers out there, both dairy and otherwise that attempt to boast this delicious flavor combination. They’re good I’m sure (I honestly have not tried the store bought concoctions of them) but proooobably not healthy. While the almond milk substitute ones have caught my eye (really always the caramel ones catch my eye but I resist the sugar and just go for unsweetened coconut/almond creamer from Califa Farms), I long for the ability to have a mug of this in my own home. And then aha! It is possible!
Over the past couple of months, I’ve been testing the use of collagen in foods and I have been finding that they’re an addition to food that I don’t really notice. Collagen is great for smoothies, coconut cream ice cream, and lots of creamy desserts, and even in your coffee. It has tons of benefits for you – it builds the proteins in your nails, hair, and helps prevent wrinkles. By adding this to your daily routine in some way, shape or form, you will start to notice a difference.
I’m choosing the Bulletproof high-performance collagen protein for this recipe. Jon and I have been using the MCT oil from Bulletproof for a few years now so this is an easy choice for us. If you don’t want to buy from Bulletproof online, you can check your local Whole Foods store for something similar.
This recipe is so simple I can’t believe I haven’t been using it before! Literally all you have to do is blend the ingredients together, and they were all things I luckily had already in my kitchen cabinets.
This pairs so well with my Sugar-Free Banana Bread, as pictured here 🙂
Just using a little bit of local honey for sweetness makes the drink perfect to satisfy that craving. You can of course leave it out, if you prefer! Only a dash of peppermint extract is needed, a little goes a long way here. For this I like using almond milk, but coconut milk or another is perfectly fine, too, your choice! (For this I actually used almond milk versus the creamer I mentioned earlier.)
Best part about it? I can enjoy this peppermint mocha in front of my Christmas tree on the couch with my pups nearby. Ahhh Christmas 🙂
- 1 cup fresh brewed coffee
- 3 tbsp bulletproof collagen protein you can use other brands of collagen powder as well
- 2 tbsp cocoa powder
- 1 tbsp local honey
- 1/4 tsp peppermint extract
- 1/2 cup almond milk unsweetened vanilla
- Well, this recipe couldn't be easier 🙂 Take your fresh brewed coffee and add all of the ingredients listed and blend for several seconds until you get a nice foam forming at the top. Enjoy this winter treat!
