Think loaded potato skin, buffalo style! This is a stellar choice to keep you satisfied if you have a big afternoon ahead.
- 1 chicken breast
- ¼ cup of Franks Red Hot Sauce
- 1 sweet potato
- Green Onion for garnish
- Dash of salt, pepper, and garlic powder
Preheat oven to 350 degrees. In a baking pan, spray olive oil at the bottom. Season the chicken with salt, pepper, and garlic powder. Let it bake in the oven for about 25 minutes, until fully cooked. Not all of us have tons of time to let a sweet potato cook in the oven (as delicious as they come out in the oven) so for a quicker baked sweet potato, you can do almost as well I the microwave. Using a large sweet potato, spear the potato a few times with a fork. Put in the microwave for five minutes. (Rule of thumb when cooking sweet potatoes in the microwave overall: each sweet potato adds five minutes of cooking time.)
When the sweet potato is done, it will be hot, so you may want to grab your oven mitt or let it cool in the microwave for a few minutes. Then slice open, letting the steam out. After taking out the chicken and letting cool for a few minutes, dice the chicken, and put in a mixing bowl. Add in the Franks Red Hot, and mix together. Pour the chicken on top of the sweet potato, and garnish with green onion. Add more hot sauce as desired.
