Collagen boosting, mineral-filled, and pure comfort in a bowl, this is the only bone broth recipe you need. It’s truly my favorite one after testing quite a few versions. It’s easy to make – just let it simmer!
- 1 chicken carcass meat removed
- 4 quarts water enough to cover the chicken carcass
- 4 tomatoes
- 1 sweet onion diced
- 1 cup spinach chopped
- 3/4 cup green beans chopped
- 1/4 tsp ground ginger
- 1/2 tbsp dried oregano
- 1/4 tsp tumeric
- 1 tsp rosemary dried or fresh
- 1/2 tbsp salt or more to taste
- 1/2 tsp red pepper flakes
- 1/2 tbsp parsley fresh
- 1 tbsp lemon juice
Add the chicken carcass to a large soup pot and cover with water (about 4 or 4 and a half quarts) and cook over low/medium heat until brought to a simmer. Let the soup simmer for about 6-8 hours.
As soup simmers for several hours, prepare a cookie sheet and add four large tomatoes, slicing the tops of the tomatoes in quarters. Put oven to broiler setting, and place tomatoes under the broiler for about 10 minutes, until a nice char forms. When cooled, dice the tomatoes.
After 6-8 hours of simmering, remove the bones from the broth, and add the tomatoes and other remaining ingredients - chopped vegetables and spices. Bring to a simmer once again, and let cook for another 20-30 minutes. Add more salt if desired.
