This meal is packed with good fats and proteins – the avocado is a perfect substitute for a creamy mayo, too.
- 6 Hard boiled eggs (chopped)
- 1 avocado (chopped)
- 2 stalks celery (chopped fine)
- 1/4 yellow onion
- Dash of celery salt, cayenne pepper, regular salt
After hard boiling the eggs and peeling, chop the eggs and put into bowl. Add one whole avocado, chopped, and chopped celery. Add onion and seasonings, adjusting salt and pepper to taste.
